Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1 medium yellow onion sliced
  • 4 cloves garlic minced
  • 2 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

Equipment

  • 6-quart slow cooker (crockpot)
  • Instant-read meat thermometer
  • Cutting board
  • Chef's knife
  • Measuring cups and spoons
  • Small mixing bowl
  • Two forks
  • Paper towels

Method
 

  1. Pat the chicken dry with paper towels.
  2. Layer the sliced onion and garlic in the bottom of the crockpot.
  3. Rub the chicken with olive oil.
  4. Mix the Italian seasoning, paprika, salt, and pepper, then coat the chicken.
  5. Place the chicken on top of the onions.
  6. Pour the broth around the edges of the chicken.
  7. Cover and cook on low for 4 to 5 hours, or on high for 2 to 3 hours.
  8. Check that the thickest part reaches 165°F.
  9. Rest the chicken for 5 minutes, then shred or slice and spoon juices on top.

Notes

  • Thaw chicken completely before cooking.
  • Thighs work too and stay extra juicy.
  • Store leftovers in their juices for up to 4 days.
  • Freeze for up to 3 months and reheat gently with a splash of broth.
