Ingredients
  

  • 1 lb ground chicken
  • 1 tbsp avocado oil
  • 3 garlic cloves minced
  • 1 tbsp fresh ginger grated
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 3 green onions sliced
  • 1 tbsp sesame seeds

Equipment

  • Large skillet (12-inch nonstick or cast iron)
  • Wooden spoon or sturdy spatula
  • Small mixing bowl
  • Whisk
  • Measuring spoons
  • Microplane or Grater

Method
 

  1. Whisk the soy sauce, honey, rice vinegar, and cornstarch slurry in a small bowl.
  2. Heat the avocado oil in a large skillet over medium-high heat.
  3. Add the ground chicken and press it into an even layer.
  4. Cook for 2 minutes without stirring.
  5. Break the chicken into crumbles and cook until no pink remains.
  6. Push the chicken aside and add the garlic and ginger.
  7. Stir the garlic and ginger for 30 seconds, then mix everything together.
  8. Re-whisk the sauce and pour it into the skillet.
  9. Simmer for 2 to 3 minutes until glossy and thick.
  10. Remove the pan from the heat and stir in the sesame oil.
  11. Top with green onions and sesame seeds.
  12. Serve hot over rice, noodles, or lettuce cups.

Notes

  • Use 93% lean ground chicken for the juiciest results.
  • Swap soy sauce for tamari to make it gluten-free.
  • Store leftovers in the fridge for up to 4 days or the freezer for 3 months.
